It is considered the most traditional dish of Portugal, having many different ways to confection, varying from region to region. The ingredients are generally based on beef, pork, chicken and sausage with beans, chickpeas, potatoes, turnips, cabbage, carrots and rice.
All the meat is cooked in a pressure cooker with very little fat and vegetables and sausages are added in different stages. The meat broth is conserved to cook the rice.
It is an extremely tasty dish and yet this is a time consuming meal to prepare. That is why it is usually cooked for special occasions or in the traditional Sunday lunch.
